Buttermilk Pancakes with Orange Zest

Winter weekend mornings are the perfect time to cozy up to a pancake breakfast. I can eat them without all the side fixings of eggs and {halal} sausages, as long as the pancakes are flavorful. That’s why I like to make these pancakes with creamy buttermilk and the zing of citrus zest or peels. You could replace the orange with lemon and they’d be just as delightful.

I’m not a fan of store-bought syrups unless it’s a real maple syrup (Vermont is, of course, one of world’s very best) and if I don’t have that then I will use warmed honey or blackstrap molasses to drizzle on top.
