On a whim, I recently made a winter salad because the citrus was just so delicious and ripe that I was actually really craving it. I posted a photo on my Instagram page and it was so well-received I thought I better put it up on the website, too. I hope you enjoy it- it’s super easy to make and quite healthy, too.

Winter Citrus & Walnut Salad
Serves 2
Fill your short winter days and long nights with this lovely healthy and crunchy salad that's super easy to make and travels well so it's easy to take for breakfast or lunch on the go.

  1. 1 navel orange, peeled and chopped
  2. 1 Anjou or Bartlett pear, peeled and chopped
  3. 1/4 cup chopped walnuts
  4. 1/4 cup salted almonds
  5. 1/4 cup raisins
  6. 1/4 cup honey
  7. Zest of one lemon
  8. Juice of one lemon
  1. Combine the oranges and pears with the nuts and raisins.
  2. Add the honey, lemon zest and lemon juice and combine well.
  3. Serve immediately or refrigerate until serving.
  4. Keeps well in the fridge for about 1-2 days.
  1. Doubles and triples easily for a larger amount.
