Turkey Burgers Stuffed with Feta

Considering the beautiful weather we’ve been having lately (strange, isn’t it?), this recipe for Turkey Burgers with Feta is a lovely and light way to get the grill fired up and ease into the upcoming Spring.
Typically, this is my go-to weeknight meal when I’ve got a lot of other things on my plate. They’re super quick to prepare and since they’re not fried in a skillet, you don’t have to hover over the stove until they’re done. That’s a beautiful thing…
Turkey Burgers Stuffed with Feta
Serves 4
Special Equipment
Parchment paper
Ingredients
1 pound ground turkey
1/2 cup bread crumbs
2 tablespoons minced onions
Salt, to taste
Pepper, to taste
1/4 cup fresh parsley
1 cup feta cheese, broken up into small chunks
Directions
Preheat oven to 350° F.
Place ground turkey in a large bowl. Add bread crumbs, onions, salt and pepper, and fresh parsley. Mix with clean hands to combine all of the ingredients.
Form round burger patties. For each one, place a chunk of feta into the center of the burger and close up with surrounding meat.
To a parchment-lined baking sheet, place each burger a few inches apart.
Bake for 35 minutes (turning once during this time), or until juices run clear and the meat reads at least 165° F on a meat thermometer.
