How to Make Super Moist Roasted Chicken
If you’re afraid to roast a whole chicken, it may not be your fault. No one ever told you that butter was a beautiful thing, under the skin of chicken. You just can’t be afraid to pull up that chicken skin and push in the pats of butter, all the way through to the legs and thighs and breast of the chicken– you may need half a stick to do this. And if you’re really adventurous, roll the butter in herbs first then push it under the skin. Bake/roast as usual and you won’t believe how moist and juicy the chicken will be. No extra oil or butter needed…obviously.
