My first foray into cooking was making sandwiches. I guess I was to young to handle the stovetop, so I ventured into sandwich-making just so that I could be creative with ingredients at my disposal. I used to experiment with all sorts of fresh ingredients, lunch meats, tuna fish, or just vegetables like tomatoes and cheese- anything to create something tasty, healthy, and filling- and easy.

I love all the ingredients in this sandwich because they are fairly easy to find, fresh and go so well together. You can find the pestos at Trader Joe’s (the tomato is their newest one).

I love this sandwich with the Deli Halal Oven Roasted Chicken or Turkey Breast, but you can also make it with their Beef Pastrami, too.

It’s really now one of my favorite sandwiches ever! They might look a little messy because of the pesto, but they’re really not. The ciabatta bread really holds everything in, and if you’re packing them up in parchment paper, re-usable sandwich bags or something similar, they’ll hold up just fine.

MEDITERRANEAN CIABATTA SANDWICHES

Ingredients are per one sandwich, easily doubles

INGREDIENTS

1 tablespoon mayonnaise

1 tablespoon basil pesto

1 tablespoon tomato pesto

2 slices mozzarella cheese

2-4 slices Deli Halal Oven-Roasted Chicken Breast, Oven-Roasted Turkey Breast or Beef Pastrami (or a combination)

Handful of arugula leaves

Several roasted red peppers, thinly sliced

1/2 of a large avocado, thinly sliced

DIRECTIONS

Spread the mayonnaise on each side of the bun, then each type of pesto on one side. Add the cheese and slices of Deli Halal meats then melt in the oven or microwave. Add the arugula on one side and top with the red peppers; the avocado on the other.
