Thai Red Curry Chicken & Vegetables Stir Fry

If you’re anything like me and sometimes just really get a craving for hot and spicy Thai food, or any type of Asian food but don’t have the time or energy to go out shopping for ingredients you don’t always need on hand, I’ve got a great recipe for you. It’s quick, easy, doesn’t require a whole lot of ingredients and has one special ingredient that makes life a whole lot easier. ingredients for Thai Chicken Curry ‘And it’s healthy, too: broccoli, carrots, celery, garlic, onion, cilantro. brown the chicken Boneless, skinless chicken tenders (or you could use beef instead). Red Curry Simmer Sauce Most of the flavoring comes from this Thai Red Curry Simmer Sauce by Saffron Road, which takes the dish up a whole other notch. carrots on chopping block I like to slice my veggies on an angle for this type of dish- they cook nicely and it looks nice, too. starting the stir fry You can start out by using any type of oil you like, but for an authentic flavor, I would use either sesame oil or extra virgin coconut oil, if you have it. veggies over flame If not, just use a neutral oil like grapeseed oil so that it doesn’t overpower the dish and its other flavors. starting the stir fry Start out by sautéeing the onion and celery in the oil, then gradually adding the carrots, chopped broccoli and the chicken, which needs to brown. veggies in pan Medium to high flame is recommended. over flame Then add any dried herbs and spices you like- I added black pepper and basil, but white pepper and ginger would be nice, too. add herbs Next, the objective is to brown the chicken well. browning chicken Then grab one packet of the Thai Red Curry Sauce. ready with simmer sauce And pour it on…but again, only after the chicken has browned. pour sauce Go ahead and use the whole packet- it’s going to be delicious. add chicken broth Add a little bit of  the Saffron Road’s Traditional Chicken Broth (halal), too. It’ll help keep the dish moist. cooked stir fry 2 Cover and cook on low for about 15-20 minutes. That should give you enough time to chop up some cilantro and cut wedges of lime. cilantro And make a little rice to go with the dish, served while it’s piping hot. vertical chicken Now I’m hungry.

Chicken Noodle Soup is arguably a winter necessity because the flu is hitting a lot of people hard right now. On the local news here in Chicago, we’ve been told that area hospital emergency rooms are swamped with people being treated for the flu- heavy coughing and sneezing that they just can’t shake off without medical attention, yet flu season hasn’t even officially begun.  In my house, I’m serving up this classic family recipe for chicken soup to strengthen the immune system and give ourselves a fighting chance against whatever is out there.

To this day, whenever I eat it, it reminds me of the times when I was completely sick and fighting off something that chicken soup seemed to knock right out of the park, as long as I kept eating it, which was usually the only thing I could stomach.

chicken parm on board 5552There’s just two of us at home for dinner on most nights, unless we have guests.  With guests dinner just instantly doubles or quadruples and I can make great use out of larger pots and pans.  So, because of the clean up involved, on most nights it’s a pain to use big, oversized dishes when I only need just a small pan to make enough of one of my favorite dishes for one night.

Chicken Parmesan is cooked to perfection in these wonderful, high quality stoneware dishes by Le Creuset. They’re not too deep, so this dish bakes faster in the oven than with some of my other pans.  Best of all, they’re super easy to clean.

I have to say, this is one of the best cookware companies out there. They stand behind their products and have a great call line to help their customers out with any problems related to their products, which is actually quite rare. In my house the only problems we’ve had with Le Creuset cookware have been ‘homemade’.  I’ll spare you the details of that for now…

Stonewall Blue Le Creuset set

I got this snazzy package of Le Creuset Stoneware from Cooking.com— and so can you!  They have lots of nice colors so for me it was hard to choose between Kiwi Green or Caribbean Blue, but I went with the color of most of my cookware and stemware, which is mostly a rustic Mediterranean or Mexican style. I think it’s actually much prettier, even a bit darker, in actuality than in the picture.

So, back to the recipe (which is in full detail at the end of this post). I”ll show you some of the steps involved here, which are quite simple.

Pollo En Escabeche: Marinated Chicken From Mexico’s Yucatan Peninsula

The word ‘escabeche’ comes from the Arabic word ‘sikiube’, which means ‘acid’, and is a method for light pickling. In Mexico, escabeches combine vinegar with citrus juices, bay leaves and other herbs. This is a Mayan recipe, so it includes the traditional achiote paste made from annatto seeds and is called ‘recado rojo’. Annatto seeds and ready-made achiote paste can be found at most Hispanic markets, but can easily be made at home, too.

Mercado (Market) in Cuidad Guzman, Mexico

Ingredients

 

Achiote Paste (Recado Rojo)

1 tablespoon achiote (annatto) seeds

½ teaspoon ground cumin

¼ teaspoon dried Mexican oregano

8 black peppercorns, whole

¼ teaspoon chile piquin, or red pepper flakes

½ teaspoon salt

2 cloves garlic

2 tablespoons orange juice mixed with 1 tablespoon  white vinegar

Chicken (Boiled)

1 whole halal chicken, about 3 lbs.

10 cups water

½ white onion

4 cloves garlic

salt

3 sprigs cilantro (coriander)

Habanero and Red Onion Marinade

2 teaspoon dried Mexican oregano

2 teaspoon ground cumin

4 cloves garlic, unpeeled

1 cup orange juice

½ cup lime juice or 1 ½ cups bitter orange juice

1 pound red onions, sliced long and thin

1 teaspoon salt

6 habanero chiles (preferably roasted)

Achiote Grilling Sauce

3 ounces achiote paste (see recipe above)

½ cup orange juice

¼ cup lime juice

1 tablespoon extra virgin olive oil

Instructions

Step 1: Achiote Paste (Recado Rojo)

In a spice grinder, grind the achiote seeds, cumin, oregano, peppercorns, clove, red pepper and salt. Grind the garlic in a mortar or molcajete, add the ground spices and stir in orange juice to make a paste. Place in a small jar, cover and refrigerate until ready to use. (makes about 1/3 cup or 3 oz.)

Step 2: Chicken (Boiling)

Place the whole chicken, water, onion and 4 cloves peeled garlic, 1 Tb. salt and the cilantro in a large pot or Dutch oven and cook over medium heat for about 30 minutes or until the chicken is tender. Drain and set aside. When cool, break apart into large pieces (work on next step while chicken is boiling).

Step 3: Habanero/Red Onion Marinade

Meanwhile, toast the oregano, cumin and unpeeled garlic. Then peel the garlic and puree in a blender with the oregano, cumin, orange juice and lime juice.

Place the red onions in an earthenware or enamel container and add the puree you just made. Stir, then add 1 tsp. salt and bring to a boil over medium heat. Remove from heat, add the habanero chiles. Set aside for at least two hours.

Step 4:  Achiote Grilling Sauce

Dissolve the achiote paste in the orange and lime juices in a bowl and stir well, add olive oil and mix thoroughly. Place cooled chicken in a deep broiling or grill pan and pour the mixture over the top.

Step 5:  Finishing

Using an outdoor grill, indoor grill pan or your oven broiler, cook chicken for 5-15 minutes, allowing it to crisp slightly. Let cool then shred by hand. Just before serving, arrange the shredded chicken on a large platter and cover with the red onions and habaneros chiles mixture. Serve with a side of beans, warm tortillas and all the traditional Mexican-style toppings you enjoy!

Serves 6-8 hungry people, but recipe can be doubled, tripled or quadrupled very easily!
