Molokhia

It’s a wonder I haven’t posted this recipe earlier. I’ve been making it for many years and it’s considered on of our favorite healthy go-to soups, but I wasn’t sure how many others would be interested to know how make it.  After numerous requests, I had my answer. I really hope you’ll make it at home, too…

Indian Spiced Whole Chicken

It’s so hard to believe the month of Ramadan is nearly over, which is a bit sad for us because we love it so much. It’s such a time of being scheduled and focused and distraction-free. However bittersweet the end is, there is also a great reward in the three-day long celebration of ‘Eid ul Fitr, where we can enjoy the accomplished feeling of having fasted and completed a very special religious obligation.

Buffalo Wings | My Halal Kitchen

Buffalo Wings

One of my favorite summertime recipes is for Buffalo Wings. The first time I ever had them was way back in college- it was the late night food of choice with friends- we didn’t have a care in the world about eating spicy food at that hour, or any food at all for that matter. It was quick, easy, inexpensive, greasy and just so so good…

Ground Turkey with Potatoes and Mint | My Halal Kitchen

Ground Turkey with Potatoes, Tomatoes, Mint & Parsley

This is a quick weeknight meal if there ever was one. If you can’t find halal ground turkey you can substitute with ground beef or chicken instead; alternatively- and if you’re feeling adventurous- you can purchase the whole turkey (typically found in the freezer at most halal meat markets) and grind the meat yourself with attachments that can be used with most Kitchen Aid stand mixers. Enjoy!

Chicken Rogan Josh with Potatoes, Peas and Cilantro

Rogan Josh is a north Indian curry dish that is typically served with lamb. The word rogan is Persian for oil and josh mans hot or heat (some also say it means passionate).  Despite the name or meaning, I’ve not ever had this dish at the multitude of Indian restaurants, weddings or gatherings that I’ve attended, and I thought I had tried just about every common Indian dish. Maybe it’s not all that common.

Turkey Burgers Stuffed with Feta

Considering the beautiful weather we’ve been having lately (strange, isn’t it?), this recipe for Turkey Burgers with Feta is a lovely and light way to get the grill fired up and ease into the upcoming Spring.

Typically, this is my go-to weeknight meal when I’ve got a lot of other things on my plate. They’re super quick to prepare and since they’re not fried in a skillet, you don’t have to hover over the stove until they’re done.  That’s a beautiful thing
