Stuffed Figs with Creme Fraiche, Honey & Almonds | My Halal Kitchen

Stuffed Figs with Yogurt Cheese & Topped with Honey, Almonds and Walnuts

I never used to proclaim a favorite season, mainly because  to me, all seasons without extreme temperatures are beautiful in and of themselves. Each one has something special about it and something I attach to it, whether it’s food, activity or travel-related. I’ve noticed, however, that year after year the one time I have come to appreciate most is the very short period in between summer and fall where it’s comfortable enough to wear pants and a light jacket without sweating and without requiring a coat that’s heavier than my body.

How to cut avocado

How to Cut an Avocado

Have you ever really just wondered if there was a super quick and mess-free way to dig into an avocado, particularly the part where you grab the seed out with a knife like all the really cool chefs do on The Food Network?

How to cut avocado

Well, I’ve had a lot of practice, being married to a man who is half Mexican- one must always be ready to make guacamole on the fly, especially when there are steaks on the grill or fresh tortillas around.

Mission Fig Jam | My Halal Kitchen

Mission Fig Jam

Fig season is one of my favorite times of year. It reminds me that the Fall season is soon on its way, that the intensity of the summer heat is over {usually} and it’s almost time to wrap myself up in a comfy sweater and curl up with a good book food magazine. It’s not dark very early or very late; it’s not slushy and freezing outside; it’s simply perfect.

Ramadan + summer= a great time for fresh and delicious fruit salads. Believe it or not, there is a way to make fruits salads even better, particularly when they’re part of the Iftar (breaking of the fast) part of the sunset meal and need to be made ahead of time for guests.

Buffalo Wings | My Halal Kitchen

Buffalo Wings

One of my favorite summertime recipes is for Buffalo Wings. The first time I ever had them was way back in college- it was the late night food of choice with friends- we didn’t have a care in the world about eating spicy food at that hour, or any food at all for that matter. It was quick, easy, inexpensive, greasy and just so so good…

Cheesy Jalapeño Burgers

It’s summer. It’s Ramadan. Do you blame me for craving a burger?  Hopefully not, because maybe you are, too. Chances are there’s plenty of people grilling the summer away as much as possible, since that’s usually the most popular item to throw on. In my case, grilling isn’t so easy so I opt for either oven baking or pan sautéing my burgers. Either way you have them, I think you’re going to love this recipe for a super-quick burger topped with what I think is one of our nation’s best cheese..and it’s halal-certified.

Cheese Jalapeno Burger, Oh My

Cheese from Vermont-based Cabot Creamery has long been on my list of favorite cheeses and in my shopping cart for many years, especially since I noticed that several of their products were halal-certified by IFANCA

Sauteed Spinach and Zucchini | My Halal Kitchen

Sautéed Spinach, Baby Zucchini and Mushrooms

The season in between spring and summer is the time to make the best use of delicious veggies- spinach, baby zucchini, fingerling potatoes, and white button mushrooms. Fortunately for us, they all go so well together in flavor profiles, too. Try this saute recipe over rice or pasta. We even had the leftovers stuffed in pita halves with melted cheese. Ah-mazing…
